Grilled cheese sandwiches are among the most heavenly of comfort foods. But why opt for those rubbery, pre-wrapped slices of processed American when you can have Gruyere, Comte, chevre or robiola melted between two slices of good bread instead?
Caseus, a New Haven bistro and fromagerie, hit the road in early February with their Cheese Truck. The truck parks at highly-trafficked downtown spots and serves gourmet grilled cheese sandwiches, sausage, tomato soup and creative, organic salads from a mobile kitchen.

The classic grilled cheese, served with cornichon pickles and grainy mustard on the side, runs for only $5. Add-ons like guacamole, bacon, roasted red peppers and Jambon de Paris are $1 extra. For $7, you can pick up the grilled cheese of the day. Recent specials included mouth-watering ingredients like pulled pork, Taleggio, fig jam, jamon serrano, portobello mushrooms, brisket and fresh mozzarella.
Can't decide? Get a soup/sandwich combination for $7, or a salad/sandwich pairing for $9.
